Here are some questions to consider when planning your party

*Location.  Are you having an indoor or outdoor event?
*What is your budget per person.  Determine one and stick to it.
*How long will your event be?  This will help you determine what to budget.
*Do you require full service such as set-up, passing, serving, clean up, etc.?
*Do you plan on having any pupu's/appetizers before your main meal?
*Do you have any other requirements like table linens, eating utensils, paper goods?
*Will there be children at your event?  Consider a kids menu for them.
*Do you need beverages, coolers, ice, etc?
*Will you have family/friends serve the food on a buffet line?
Born into a culinary talented family Mitchell was destined to cook.  As the third of 5 brothers he learned quickly
that he had to learn to cook to survive on the dinner table.  Since the very young age of 11 when he decided that
he wanted to cook he realized that this was going to be the way he made people smile.  And that is what he has
been doing since the age of 15.  It was at this age he first started his culinary career as a dishwasher for Zippys
in Kaneohe.  He soon learned the way of the kitchen and knew that in order to get closer to the food he loved
eating he had to learn the ropes.  He was very quickly promoted to a cook trainee and then a 1st cook.  After
serving his time with the Zippy masters, he started with the Hilton Hawaiian Village in the main kitchen.  There
his highly intensified training began.  With the opportunity to work with some of the worlds renowned chefs
from Hawaii, California, Europe, Germany, Thailand & France his culinary skills were sharpened and perfected.
 While also training in the apprenticeship program by Hilton worldwide he learned to masterfully create classic
dishes and timeless sauces. 1990 brought him to the grand opening of the award winning Hawaii Prince Hotel
Waikiki.  Where he has been for the last 19 years continuing to perfect his talent for preparing & cooking
tasteful, simply ono-licious food.  I meet him when he was also a sous chef at the Hawaii Convention Center
preparing food for up to 5000 people at a time!  While his baseline culinary skills are in classic foods with his
local Hawaiian background his speciality is local style "broke da mouth" grinds.  It is really his love of this local
food and all of its comforts that makes him the "Hawaiian Master" at traditional Hawaiian food.  I have known
and loved Mitchell for over 10 years and it is his incredible talent for cooking that drew me too him.  But mostly
it is his strong desire to truly make people smile and happy with his culinary talents.
                                     
 
Paula Kalima
At a young age it became evident that Paula would be involved with food for life.  She was born into a family of
culinary, home taught cooks.  With recipes handed down by her grandparents she quickly learned that the way
into a families heart was through their opu's (stomach's)!  Learning her basic skills from her mother, father,
auntie and grandmother she was a natural at preparing all the family meals to everyone's delight.  Cooking for
her sister at the young age of 8 was not by chance it was by necessity and yet it still remains something she loves
to do.  After graduating in 1982 she moved to Seattle and continued to learn about food by expanding her
culinary awareness.  She was introduced to Thai, Vietnamese, Jewish, Cajun, Soul, Scandinavian, Mexican
food & street food.  Joining her father at working for a established Seattle restaurant and catering company it
was here she learned to really love the food service business and discovered this was a great outlet for her
creative talents.  While working full time for local Banks and perfecting her business management skills she
worked nights first as a server and then eventually on weekends as a Wedding Event Manager.  She started a
small catering business with a friend which they successfully ran for a few years.  After returning home to
Hawaii 18 years ago and then eventually meeting me, the LOVE of her life, she convinced me that with my
culinary talents and her business savvy we too could make a go of starting our own catering business.  Her
dedication to her banking career and her desire to provide a legacy for our family is what draws me to
Paula...but its really the smile on her face every time I prepare one of her favorite meals...beef stew!!!
